Under the ground, in a century-old stone cellar, in the most modern vats of stainless steel connected to nitrogen the Ipša extra virgin olive oils are stored in order to preserve their superb quality and freshness.
The family of the Istrian village Ipša in the municipality of Oprtalj has olive groves on the leeward side, above the middle of the hill, on old terraces between 190 and 250 metres above sea level. Here they are less exposed to the mist, salt and cold.
They pick the olives by hand and process them with a cold process the same day that, along with natural decanting, gives the oils a fresh, aromatic and slightly spicy taste.
They make their already quite legendary oil from the following varieties: Istrian Bjelica, Frantoio, Leccino, Bugla and Črnica.
Their oil was listed amongst the best 500 in the world by the guide Flos Olei in 2016, and was awarded 96 points out of a possible 100.
