The interior is just idyllic, you get the feeling as if you’re aboard a most luxurious cruise ship with subtle music playing, wind in your hair (if the windows are open), elegant, sophisticated, yet tastefully designed. The hotel and restaurant in a dome boasting a panoramic view are only a year old. Currently they’re in the process of creating a recognisable menu and promoting regional wines. We got the opportunity to see that for ourselves.

Sky is an à la carte restaurant open to the wider public. All the ingredients are from Croatia with seafood and Simmental and Angus beef meat reared in Croatia equally represented, much like Mediterranean and international cuisine. The olive oil originates from nearby Vrana, while the fruit and vegetables stem from the surrounding family farms.

As far as the appetizer is concerned, we ordered the Dalmatian ceviche made from sea bass, marinated anchovies, sun-dried tomatoes and white balsamic vinegar beads. Maraština Birin, a local hit, went great with this interesting dish. This is an excellent wine made very near the restaurant itself, in the vicinity of Vodice. Barren soil produces phenomenal results in the hands of this talented winemaker and further accentuates the appetizer.

Seafood risotto Sv. Jakov proved to be a safe combination, it’s decorated with a big shrimp on top, a few mussels, and it’s even better when seasoned with local olive oil. It was perfectly “drenched” in local wine, naturally - Birin Babić. Another variety native to the Šibenik region for a phenomenal pairing with the main course. From the very first day Sky places emphasis on steaks aged from 14 to 21 days. They’re additionally pointed out in every place, and they’re roasted in a state-of-the-art Josper coal oven. Naturally, Babić goes great with them as well.
Maraška sour cherry padišpan is their house confectioner’s specialty, and you also have the coconut crème brûlée, classic Panna Cotta so your enjoyment is complete.

Simply put, steaks in combination with selected local wines with the highest view in Dalmatia is something you’ll definitely remember. After lunch head straight to the open swimming pool on the ninth floor with the corresponding bar.

The top view overlooks the small town’s red roofs on one side, while if you look the other way, you can enjoy view of the Šibenik archipelago, the sea, large marina and countless promenades with beaches, water parks, massages and everything that makes Vodice so popular.
