Stancija San Antonio from Vodnjan has more than 7,000 olive trees in an area which was known for the excellent quality of its olive oil even in Roman times! The olive groves with international ecological certification are on a gentle slope forever bathed in sunlight, between 106 and 80 metres above sea level, are 2.5 kilometres from the sea, plus they also have a view of the Brijuni National Park.

They produce monovarietal extra virgin olive oils, which have won numerous awards at national competitions, as well as at world famous festivals. So Karbonaca provides a fresh oil with the smell of olives, apples and aromatic herbs, whilst Leccino, due to its fruity freshness, suits seafood dishes excellently. The Istrian Bjelica is an exceptionally bitter and spicy oil of a distinctive smell of grass, leaves, almonds and tomatoes, whilst Buža Ženska Vodnjanska has a uniform aroma of olives and apples plus a pleasant sweetness.

Due to these qualities, every San Antonio extra virgin olive oil is suitable for various dishes.

Description:

The olive groves with a view of the Brijuni National Park are cultivated ecologically, and the oil is ecological certified with a globally recognised certificate. In them grow more than 4,000 seedlings of indigenous varieties of olives obtained from existing old trees in cicatrised olive groves.
Some of the olive trees were over 100 years old, and they used them to obtain new shoots which due to their indigenousness are more resistant to pests, more adapted to the climate and what is more important, the tastes, aromas and smells of the centuries-old Istrian olive groves have been preserved.
Only oil from their own olives is sold, there is no purchase of olives or oils from other producers.
In 2014 one of the most modern olive mills in Europe was equipped and they can guarantee that the olives entered the process just hours after the harvest, in the refining procedure the oil was not heated above 27⁰C and that the residues of other olives and oil were washed away from the entire system before the refining of the olives.
With the application of all the mentioned measures the ecological cultivation in the olive groves, the ecological refining and most modern method of storage where the oil does not lose any quality and value even two years after refining, can be highlighted entirely.
