The sound of water running from a small fountain can be heard in the old house’s courtyard and there’s also a small aquarium. The interior is much more opulent, but life takes place outside during the summer. Ingredients are essential and the owner buys everything himself. He always has the same butcher and has no problem driving all the way to Zadar.

Courses are offered here from the very start and the best thing to do is to take the advice of the pleasant and smiling staff who’ll recommend the freshest dishes of the day. Fish in salt (John Dory), shellfish with shrimp with pasta in red and white sauce was the recommendation of the day. There was also room for the freshest oysters, clams, mussels with carefully selected local olive oil.

The owner’s wife, the first sommelier in this area, is also an important part of the quality service. Consequently, the wine list is phenomenal as it contains more than 200 labels and renowned names such as Krauthaker, Enjingi, Zdjelarević, Korak, Stina, Cebalo, Šibenska vinarija, Džapo...
To get things going we got our hands on a fish pâté with olive and lots of olive oil, which was followed by prawn, sprat, small monkfish tail, cuttlefish and calamari friture with fried rucola. Dried rucola is tossed into simmering oil thereby becoming perfectly crispy. This appetizer is one of top 10 specialties you can try in entire Dalmatia, pure sea, algae and minerals in a flour canvass and it’s almost completely fat-free even though it’s been fried. Krauhaker rose was the tender yet peculiar wine that went brilliantly with this completely fat-free dish.

The olives are home-grown, salted then frozen and defrosted in homemade oil. The aromas will blow you away. Nowhere did we have black olives that were so delicious. Next up was another dish Skradin is widely known for - Skradin risotto made from veal shoulder and here it takes in excess of four hours to prepare it. Tender chunks of almost indiscernible meat coupled with great rice and phenomenal cheese went great with the local diva among wines Maraština 2016 by Slade grupa. A brilliant combination, scents and flavours of Dalmatia in a single morsel.

Finally, another autochthonous specialty, Skradin cake, flour-free, with walnuts, eggs, almonds and rose rakia. You have house succades and roasted almonds on the table, just to be on the safe side. Excellent! Zlatne školjke has been honouring their guests’ privacy since day one so even their most famous guests can enjoy the food without being bothered. Even after 39 years in this business, married couple Petrović goes to great lengths to keep everything beautiful. And that’s the impression we got. Truly wonderful...
