Stara Loza

This is a boutique hotel where each room was done by a different designer and contemporary art fits perfectly into the old building. You’ll be welcomed by pleasant free jazz music, an atmosphere reminiscent of world’s global cities, silver chairs and tables, black tablecloths and napkins, complex modern paintings put up on the walls. You won’t get a lot opportunities to see something this magical.

But we’re here for the food. The entire concept is based on local and organically farmed ingredients used in traditional recipes while employing modern techniques. In short, this is a one-stop trip across Croatia in a totally funky way.

There are about ten carefully chosen wines priced by the glass to kick off your stay in what’s probably the most relaxed setting there can be in Croatia. The wines encompass the local malvasia Crvik, Stina from the island of Brač, Duboković from Hvar all the way to Skradin, Pleševica, Kutjevo and foreign labels.

Given that the restaurant is part of the hotel and how narrow houses in Dubrovnik are built, Stara Loza encompasses several levels. You have the street section, ground floor with the reception, upper floor and a terrace giving a view of the entire city. Pure bliss. Pay special attention to the interior design that will distract you every once in a while and take you to a whole different world. Without exaggeration, this is a place to unwind...

But what to eat at Stara Loza... the current early season menu is based on fresh local produce like octopuses, sardines or local shellfish, lamb prosciutto and beef steak tartare. After you’ve finished relishing the starters and the fantastic basil butter, it’s time to have the main course. Cod blanquette, local mullet and turbot or, if you’re in the mood for meat, lamb, ox cheeks and beef fillet. Clear, concise and simple. We eagerly await the new season menu which will also be planned out by Damir Šarić, a well-known young chef. The way he keeps things simple and preserves the ingredients’ basic flavours will render your lunch or dinner just perfect. The same chef is credited with what are probably the most sensual desserts in town. Namely, goat milk ice cream, verbena oil foam and a combination of lemon gel and crispy cuttlefish ink called “Citrus”.

A designer concept with every last detail carefully laid out. A brilliant stimulus for your eyes and senses. You’ll have a hard time finding a place where the dishes are so good, especially the desserts. Hats off to Stara Loza. This is truly a novel concept, a modern fairy tale!
