To come to Croatia and not to visit beautiful Šibenik is something you simply cannot do. This amazing town is adorned with beautiful sea, parks and monuments, and in the Gourmand world, there is a place that particularly stands out. Besides having a perfect location, right next to St. George's church, Pelegrini restaurant has been named Croatia's best restaurant for the second time in a row!

If you wish to experience meals in courses, superior slow food and top quality service, this is the right place for you, because Pelegrini is all of that. The best of the best, graded by guests and experts. The restaurant consists of three parts; a glorious terrace, an interior with the kitchen and a couple of tables on the stairs with views of the beautiful church. The interior is minimalistic, with some stone pieces, some wood and accolades on a shelf...Everything revolves around the food preparation, design and service.

The locale's philosophy is to use local ingredients as much as possible, following traditional recipes, with a bit of a modern twist and some additions from all cuisines of the world. The menu consists of 27 dishes, from appetizers to desserts, and the guest chooses a minimum of three or five (for dinner) of these. So, if you want, you can order five main courses for dinner!

The freshness and seasonality of the ingredients is visible in the local oysters, fresh, fragrant clams, coming from their farm near Skradin. They also produce their own olive oil near Šibenik, and the preparation of their homemade sour bread lasts for 15 days. Hot or cold appetizers let you know immediately that here everything is world class, the combinations are bountiful, the ingredients carefully chosen, and the wine selection is phenomenal. Some house wines come from a collaboration of the Chef Rudolf Štefan and the Bibich winery from nearby Plastovo, near Skradin. Brilliant wines (local sorts, as well as global ones), but, most importantly, fantastically paired with every dish. Make sure to order the recommended pairings, because the experience is indescribable.

Local squid, cuttlefish, homemade black pasta, sea urchin roe, all fresh and from the Adriatic. The meat specialties have an equal status here as well, in a special way, naturally, because nothing is ordinary here – everything is directed towards absolute pleasure for every guest. “Sipa i njok” or cuttlefish with gnocchi is the kind of dish you need to try and you will realize why you should visit Croatia, come to Dalmatia and eat dishes that come from our sea. This is perhaps the best dish in all of Croatia, a combination of nature, sea, love and culinary skills.

Pelegrini is among the very best restaurants in Croatia, so it comes as highly recommended. The crown of gastronomy that is very deserving of the throne!
