The very journey to the world of ingenious flavours in one of the most beautiful bays in Paklinski Islands, namely, bay Vinogradišće, makes a part of an unforgettable marine adventure. An organised boat transported us from Hvar to this boaters’ paradise. We got out a balmy side road with soothing cricket sounds and, as we passed by wooden barrels with candlesticks and tables decorated with pebble vases, we found our spot overlooking the turquoise sea. We delved into Mediterranean flavours in an ambience reminiscent of a sailboat.
A magnificent tuna tartare, lightly seasoned with garlic oil oozing a luring smoke aroma, was served as the appetizer. What a barrage of colours and aromas on a plate! A wonderful shade of purple reveals that this is onion gel. You also have a broad bean cream, then onion and Hvar bitter orange jam, as well as two kinds of caviar – black and white. Every component of this dish is there for a reason. Intense balsamic vinegar beads provide the sweetness and acidity that kicks up the tuna, whereas integral wheat flour crackers with a bit of sunflower and flax seeds add the auditive feel to this hedonistic mosaic. A local lemon and caper jam with its sweet and sour notes will blow you away as soon as you try it, and then the capers will stay on the palate for a long time. When it comes to wines, don’t give it a second thought and let yourself be guided by the hosts who’ll encourage you to explore local varieties. An almost forgotten variety called Bogdanuša went great with the tuna tartare.
Luka Krajančić, the renowned winemaker from Korčula, and his wine Intrada were more appropriate for the next dish. This wine went perfectly with the limpet, prawn and mussel risotto. Every bite of this intense yet delicate dish revealed subtle smoke aromas released by the seafood further accentuated by caramelised cheese. The opposites of hot and cold made the perfect composition in this particular dish. After having ice cream in the main course, this icy refreshment was also included in the dessert.
Egg and prosecco zabaione was served in a magical ball of ice instead of a plate. A crunchy and cold almond flour crumble is hidden away under a creamy phantasy sprinkled with raspberry dust. Roasted sweet peppers give it an extra sparkle, and this is a combination that made us press pause and give solemn promise to come back to this foodies’ paradise.
