Gault&Millau: Zagreb POP

Bistro Šalša is located on the first floor and terrace of a house in a very quiet part of Zagreb, among small houses that are a few minutes’ walk from the Trešnjevka market. From its first day, the bistro has emphasized a focus on what is made and what is eaten, and not on mere advertising. In this way, it has captured the hearts of those people who know exactly what they want.

Šalša can literally be divided into two parts, the one that works until 3:00 p.m. and one that starts to work at 4:00 p.m. In the first part of the day, it is a place for a quick but filling snack up to a price of 40 kunas and in which you can order one of the three dishes of the day (based on meat, but fish on Fridays).

The afternoon part is completely devoted to meat delicacies, including various type of burgers, for which it is among the top three places in Zagreb. You can also order tortillas stuffed with pork tenderloin, falafel, and a vegetarian tortilla. In addition to the burgers, ribs and chicken wings are part of the daily offer. In short, Šalša is an American snack bar adapted to domestic conditions in a completely modern way.

The staff is hearty and honest, simple and straightforward; the color black predominates, both in the uniforms and the bistro, but there still is sufficient light. The terrace is ideal for a longer stay and forgetting the world around you while sampling the domestic craft beers (San Servolo, Fulir, Zmajsko), or the more classic ones. You can also select from among 10 name from the wine list (Perak, Miličić, Ivan Dolac, and others).

Šalša is best known for its burgers, made from rump steak, of outstanding quality, and deliciously thick. It is a heavy piece of meat, more so when you will find inside zucchini, yogurt dressing, and marinated roaster peppers. The grilled chicken wings (wings are juicier than thighs) are lusciously dipped in a not too hot and not too sweet sauce, and the homemade french fries are proudly prominent on a table at the entrance. You can always request some of the many sauces, but without saying anything you will get a small serving of colorful salad.

The BBQ ribs are like "sugar for the middle of the meal," in a normal or extra-large portion, loaded with a tomato sauce and the aroma of cumin, which goes well with a yogurt dressing. At the end, there is still the cheesecake. Brilliant.

Šalša is an outstanding place to escape from the crowds of the city, with its parking and totally Zen hacienda of a terrace, American snacks in a Croatian way, snacks at the highest level with outstanding meat. It is a place with a most serious approach to food, with a happy atmosphere and a smile from the kitchen. Bravo.
