If you are one of those people who think that Varaždin is one of the most beautiful cities in the region, the location of the Bedem restaurant will immediately attract you for at least one meal, and even more if it is warm because then you can enjoy another wonderful meal and have a nice view.

The price range is another huge plus of this restaurant, even more so when you try all of the fine dishes that are prepared here. But let's start at the beginning.
In the immediate vicinity of the Varaždin old town with a view of the fortress wall, is this beautifully fitting restaurant that that they fondly call –a fortress of outstanding food. The interior, adorned with brick arches, looks like a wine cellar with landscapes on the walls and a thick, bound and tasteful menu, which on the inside is very colorful and modern.

Bedem is managed by the Varaždin chefs Anđelko and Zlatko, who, in their words, use the freshest local ingredients, and by studying traditional recipes, prepare a menu that follows the latest trends and techniques. The menu is dominated by domestic specialties, all of which are full of details that the brilliant staff, with patience and spirit, will slowly but surely explain.

Three types of soup open the menu, Zagorje-style soup, a soup of zucchini and curry, and Habsburg soup (a cream soup with peas and mushrooms. We were more than satisfied with the first, mildly sour, strong, and rich. The warm appetizers range from štrukli with pheasant through a confit of salmon, to a bomboniere of goose liver, and there are also tender and filling mlinci a la Varaždin with cheese and bacon and plenty of domestic cream.

The house specialties are svinjska potrbušina (pork belly) a la Đelac, and sea bass a la Zlatko. The svinjska potrbušina is tender and aromatic, and green beans as a side dish completely soften the strong taste of the meat – a proper and very light meal. The dishes can be accompanied by a brilliant domestic sauvignon and a red coupage from the surrounding hills.

Bedem is also known for wild game dishes, like venison with mushrooms, its filets, and its sauces, but also classic offerings, such as pike with roasted vegetables. For dessert there is a complete range of traditional and modern pastries, but of course you should try the dumplings and strudels, which you should order before the main course because they are made from scratch.

"Value for money", a pleasant gastro experience and restaurant to which you will most certainly return - fortify yourself in this fortress of outstanding food in the heart of Varaždin!

These two well-known chefs, Anđelko and Zlatko, who have built up a unique culinary identity, are the most distinctive participants on the Varaždin gastronomic stage. They are professionals with a great feeling for the harmony of tastes, but at the same time with a creative approach to the culinary art. They have both been awarded the title of national champion in culinary arts, medals from the culinary Olympics, and the World Culinary Cup. They are without a doubt the most decorated Varaždin and Croatian culinary team. The dishes that they prepare as based on their research of original local recipes with a technically perfect and imaginative use of the best ingredients, especially from this region (Vidovec cabbage, pumpkin oil, fresh vegetables and Zagorje turkey) and puts them in the position of the creators and leaders of a new Varaždin cuisine that is based on the principles of outstanding gastronomy, a tradition of local dishes, and ingredients refined by following the latest global trends and techniques in the preparation of food.

They also think that cuisine has to be very distinct so that everyday domestic dishes are transformed into a gastronomic spectacle. Their first independent restaurant, which they opened in 2015, should be experienced as the Varaždin fortress of outstanding food.
