Not many restaurants in Croatia can pride themselves with meeting the demands of fine dining, and Alfred Keller keeps tirelessly garnering laurels from gastronomes from Croatia and world-wide. Even though he flirts successfully with molecular gastronomy, chef Melkior Bašić stays true to local ingredients and pure flavors. Mousses and other fruits of a movement which puts science gloves on chefs’ hands are merely a decoration, not the point of the restaurant’s cuisine. Perhaps this was the reason behind the recognition from the renowned French guide Gault&Millau that put Alhambra hotel’s restaurant on the list of the best of 2017.
Named after a well-known Viennese architect who designed the Alhambra hotel, Alfred Keller restaurant rounds up its entire offer with a luxury interior and a well thought-out offer of wines. The restaurant cuisine philosophy is based on using exclusively local ingredients coming in daily, from local fishermen to organic ingredients from family-owned estates, lamb and game from Cres island, fruit and vegetables, cheese from Pag island, Istrian olive oil. This is what the menu depends on, so it changes on a daily basis. From appetizers to desserts, the menu contains seven courses, and, at the beginning of every menu, there is a greeting from the kitchen. The standouts on the specialties’ list most definitely include the Kvarner shrimp tartare, Adriatic fish smoked on Cres island olive and slow-cooked lamb from Cres. Lamb ribs prepared in vacuum, then grilled on a barbecue and served with a sauce that is cooked and boiled down for 8 hours or a lamb burger with the black Slavonian pig bacon and cinnamon are only a few of the dishes to remember.
The waiters and waitresses, all coming to the table together in the rhythm of gastronomic choreography and putting everyone’s plate down on the table at the same time contribute to the special atmosphere of the restaurant. Many Croatian restaurants might learn a thing or two about treating guests from Alfred Keller restaurant because their discrete courtesy climbs up to the world’s highest levels.
